- 1 tbsp olive oil
- 2 medium onions, diced
- 3-5 cloves garlic, smashed and diced
- 2 tbsp cumin
- 1 tbsp chili powder
- 2 tbsp flour
- 1 6 oz can tomato paste
- 3 lbs ground beef
- 1 8 oz can chipotle peppers in adobo sauce
- 2 16 oz cans diced tomatoes
- 1 16 oz can tomato sauce
- 1 16 oz can beer
- 4 16 oz cans dark red kidney beans, drained and rinsed
- 2 tbsp honey
- juice of one lemon
- salt and pepper to taste
Garnish with shredded sharp cheddar, chopped green onion and/or sour cream. Yum-O!
