One Hour Chili for an Army

  • 1 tbsp olive oil
  • 2 medium onions, diced
  • 3-5 cloves garlic, smashed and diced
  • 2 tbsp cumin
  • 1 tbsp chili powder
  • 2 tbsp flour
  • 1 6 oz can tomato paste
  • 3 lbs ground beef
  • 1 8 oz can chipotle peppers in adobo sauce
  • 2 16 oz cans diced tomatoes
  • 1 16 oz can tomato sauce
  • 1 16 oz can beer
  • 4 16 oz cans dark red kidney beans, drained and rinsed
  • 2 tbsp honey
  • juice of one lemon
  • salt and pepper to taste
In a large dutch oven heat oil on a medium heat until hot. Add onions and sautee until translucent, about 5 minutes. Add garlic, cumin, chili powder, flour and tomato paste and sautee a further 2-3 minutes, until fragrant. Add ground beef and cook until no longer pink. Add the remaining ingredients except the lemon juice and simmer for 20-30 minutes. Add lemon juice and salt and pepper to taste.

Garnish with shredded sharp cheddar, chopped green onion and/or sour cream. Yum-O!

Places I wish still existed

A list of places and place names I wish still existed:
  • Thibet - as an alternate spelling of Tibet.
  • Formosa - Old Portuguese name for Taiwan. From Ilha Formosa, "Beautiful Isle".
  • Cipangu - Marco Polo's rendering of Japan from a Chinese source.
  • Siam - Old name of Thailand.
  • Burma - On-again off-again name of Myanmar.
  • Contantinople - Not Istanbul.
  • Zaire - Now the Democratic Republic of Congo, not to be confused with the Republic of Congo, which is confusing.
  • Roumania, Rumania - as alternate spellings of Romania.
  • Prussia - A place that no longer exists, the territory now belongs mostly to Russia, Poland and Germany.
  • District of Keewatin - Former Canadian territory now mostly in Manitoba, the Northwest Territories and Nunavut.
  • Sandwich Islands - When Hawaii was delicious between 2 slices of bread.
  • Holy Roman Empire - Not really holy nor Roman, but now mostly modern Germany and northern Italy
  • Cathay - Again, Marco Polo's name for China.
